i’ve made the executive decision to start food friday. (cause i’m the President of this blog. so i can literally make the executive decision to do what I please. like start naked saturdays. or weird youtube video wednesday.)
I happen to LOVE food (as much as I HATE taking pictures of it)
and since the main thing I make are sweets (love me some dessert) I’m going to have a few peeps of mine guest post for me…so we get a nice variety (and not all gain 34 pounds)
(if you are interested in guest posting email me at kimbowest21 (at) gmail.com)
Today starts with FUNNEL CAKE! it was fair week last week in eastern idaho–but the weather was rainy. and i’m a fair weather friend. so I just recreated my favorite part about fair and saved myself $60.
Ingredients:
2 eggs
1 1/2 cups milk
2 cups sifted flour
1 teas baking powder
1 teas salt
2 cups vegetable oil
(powdered sugar or topping of your choice.)
sift together the flour, (i just use a whisk…cause martha stewart told me it works the same) baking powder, and salt.
In a large mixing bowl, mix together the eggs and the milk. Add the flour mixture to the egg mixture. Beat with a mixer until smooth; the consistency should be thin enough to run through a small kitchen funnel. (if too thick beat in a little more milk; if too thin, beat in a bit more flour.) Now. i don’t use a funnel…cause i’ve already packed mine….so I just use a pyrex cup that has a spout.
In a small skillet, heat the oil on medium. Pour the batter in a circular motion (but you can get fancy) when one side is golden brown, flip it the other side.
Place on paper towel to drain, then sprinkle on powdered sugar (or whatever you like best) and enjoy!
My kids LOVE them… we made spiderwebs, a peace sign (above) and flowers. and they were delicious.
and fat free.
okay. they weren’t fat free…but the rest is true!
you can check out my hopefully not crappy food pinterest board…
or our crap we have actually tried food pinterest board (only repins of recipes we have tried and LOVED!)
and for fun…

Hello Kimbo, I was just wondering what kind of wood your uncle uses for the “Tree bed” post? It is awesome! Does he sell these beds? I would love to make one of these…
Kimbo says
he actually doesn’t use wood…it’s some special material that he has made himself out of drywall mud!!!
